Assyrtiko

Assyrtiko is a fine white winemaking variety of the Greek vineyard. It is mainly cultivated in Santorini, but during recent years it has been introduced to Crete and to the rest of Greece. It exists in the Chandakas – Candia PDO zone.

It is a dynamic and productive variety. The vine plants in the vineyards of Santorini are autogenously cultivated in their specific goblets, called “ambelies”. It is very adaptable to various soil and climate environmental conditions, it is resistant to downy mildew, powdery mildew and it endures the drought.

It has a medium sized grape, sometimes large cylindrical or conical, with conical to ellipsoidal berries, yellow skin and soft flesh with a characteristic sub-acidic taste.

From the Assyrtiko variety, high quality, white, dry wines are produced with high alcoholic content (12.8-14%), high acidity and pleasant aroma. Also it has an excellent aging potential.
